Sweet and Sour Fresh Spinach

Ingredients:

1 TBS. canola oil
2 minced shallots
½ cup sherry vinegar
1 sprig fresh thyme
1 TBS. honey
¼ cup pine nuts
2½ lbs. baby spinach
3 TBS. olive oil
1 TBS. Wildwood Blends All-Purpose Seasoning
¼ cup golden raisins


In sauce pan with 1 tsp. oil saute shallots until soft. Add vinegar and thyme, simmer over low heat reduce by half. Remove from heat remove thyme and stir in honey.

In saute pan add pine nuts with 1 tsp. oil saute until golden remove hold on side.

Large soup pot fill with ½ inch water or chicken stock, bring to a boil add spinach stirring until wilted (happens quickly do not over cook). Remove to colander squeeze out liquid.

Wipe out pot heat olive oil add spinach. Season with all purpose blend stir while heating. Remove from pot place on large platter garnish with pine nuts and raisins. Drizzle the vinegar syrup over top.
Chef Leonard's Note: Crumbled crisp bacon is also a nice addition to this dish
