Sugar Snap Pea Salad Serves 6-8

Ingredients:

1 large red pepper
2 med carrots julienne
½ lb. snap peas
½ bunch green onions chopped
1 roasted/cleaned jalapeno
2 cloves garlic diced fine
1 TBS. Wildwood Blends All-Purpose Seasoning
¼ bunch of parsley, cilantro, and fresh basil chopped
1 bunch fresh mint chopped
1 TBS. fresh ginger diced fine
3 TBS. fresh lime juice
2 TBS. champagne vinegar
1 TBS. brown sugar
1/3 cup olive oil
1 lb. cooked bay shrimp

Seed and cut fresh pepper into strips. Clean snap peas and cut at a diagnol (approx. ¾"). Add all ingredients excluding the liquids and sugar to a large bowl. Combine liquids and sugar to make dressing, add to salad and toss.

Serve on a bed of your favorite lettuce. Great luncheon main course with fresh loaf of French bread.
