Jicama Salad with Watercress and Romaine Lime Cilantro Dressing
Ingredients:
¾ cups olive oil
1 medium jicama peeled and cut into stocks
1/3 cup lime juice
1 medium bunch watercress
½ tsp. grated lime zest
4 large leaves romaine cut crosswise in ¼" slices
½ cup chopped cilantro
½ onion thinly sliced
1 jalapeno chili roasted and roughly chopped (brown it on open burner on stove top)
Wildwood Blends All-Purpose Seasoning
Combine the oil, lime juice, lime zest, cilantro, chilies and a tsp. of the Wildwood Blends All-Purpose Seasoning in a blender, blend until smooth.
In large bowl, combine the jicama, watercress, romaine and onion. Drizzle on about ¼ cup dressing and toss to combine. Add more if needed. Serve.
