Stracciatella "Rags" Soup
Ingredients:
6 cups chicken or beef broth
6-8 slices Italian bread
3 whole eggs
Virgin olive oil as needed
¼ cup fresh grated Parmesan cheese
5 chopped garlic cloves
1 to 2 TBS. Wildwood Blends All-Purpose Seasoning
1 TBS. chopped parsley
Preheat oven to 375°. Bring the broth to a strong simmer in a soup pot. Whisk the eggs and cheese together in a small bowl. Whisk the broth constantly as you add the egg mixture to the broth in a thin stream. Season with Wildwood Blends All-Purpose Seasoning and keep warm.
Brush each slice of bread with olive oil and top with chopped garlic. Place on a baking sheet, toast in the oven until lightly browned and crisp.
Place each piece of toast in the bottom of a heated soup bowl and ladle the soup over the toast. Sprinkle with parsley and serve immediately.
