(New Orleans style) Dirty Rice
Ingredients:
1 lb. long grain rice (2 full cups)
1 lb. hot sausage diced
8 oz. chicken livers
4 TBS. butter
1 yellow onion diced
1 green bell pepper
1 bunch green onion chopped
3 stalks diced celery
1 cup diced ham
3 cups chicken stock
3 TBS. Wildwood Blends All-Purpose Seasoning
½ cup chopped parsley
Melt butter, add sausage, onion, bell pepper, celery, chicken liver, and ham. Saute until sausage and livers are done. Add green onions, parsley, spice, and rice. Stir. Add stock, stir, bring to a boil, cover and place in 375° oven. Cook until rice is tender, approx. 30 minutes. Remove, fluff with fork.
Note: Chicken livers optional
