Grilled or Broiled Halibut with Ginger Cream
Ingredients:
6 8oz. Halibut steaks
1 lemon
2 cups heavy cream
½ cup white wine
1 TBS Wildwood Blends All-Purpose Seasoning
2 TBS chopped fresh ginger
2 TBS melted butter
Chopped parsley to garnish
Sprinkle spice on both sides of Halibut. Place ginger with half melted butter in small sauce pan and slightly brown. Deglaze pan with ¼ cup of the white wine and add the heavy cream. Lightly simmer to reduce and thicken slightly, hold on side.
Place halibut on hot grill or broiler marking on both sides cook on lower heat to finish, approx. 6 to 8 minutes until the flesh is white and flakey all the way through. Toward the end of cooking, baste the fish with the remaining butter, the fresh lemon, and the wine.
To serve, heat the sauce carefully not bringing to a boil and ladle over fish. Garnish with a little chopped parsley. Also good with fresh salmon.
