Lime Chicken Skewers w/ Avocado Cream Dip

Ingredients:   Makes 20

2 boneless, skinless chicken breasts

Marinade:
Juice of 2 limes
1 tsp. honey
2 tsp. olive oil
2 green chilies, seeded and chopped
¼ cup cilantro, finely chopped
2 tsp. Wildwood Blends All-Purpose Seasoning
20 6 inch wooden skewers, presoaked
Dip:
1 avocado seeded
3 scallions, chopped
1 tsp. red wine vinegar
1 tsp. olive oil
½ cup sour cream
1 tsp. Wildwood Blends All-Purpose Seasoning



For marinade, combine lime, honey, oil, chilies, cilantro and Wildwood Blends All-Purpose Seasoning in a bowl. Cut chicken breasts into cubes and place in marinade. Toss to coat each piece. Cover and refrigerate for at least 1 hour.

For dip, place avocado, scallions, vinegar, olive oil and sour cream in blender or food processor and pulse until smooth. Add Wildwood Blends All-Purpose Seasoning to taste. Cover and refrigerate for 30 minutes.

Thread chicken cubes on skewer. Cook on griddle pan or barbecue. Broil skewers until cooked through, 5 minutes on each side. Garnish with sprinkling of cilantro. Serve warm with avocado cream dip.

Chef Leonard's Note:
To prevent avocado cream dip from discoloring when making ahead, make sure you press a piece of cling wrap directly on surface. Chicken can be made 1 day in advance. Dip, 8 hours in advance.
