Turkey Meatballs with Chocolate Chipotle Sauce:
Serves 8
Ingredients:
2 lbs. fresh ground turkey
3 fresh large whole eggs
2 tsp. ground all spice
1 tsp. ground nutmeg
1 teaspoon ground cinnamon
2 TBS. Wildwood Blends All-Purpose Seasoning
4 cloves diced garlic

1 medium fine diced yellow onion
3 TBS. rice vinegar
2 oz. chipotle sauce
2 cups heavy cream
5 oz. potato chips crushed
6 oz. milk chocolate

Place raw turkey in large bowl, add all the dry spices, eggs, onion, vinegar, ½ cup heavy cream and crushed potato chips. Mix thoroughly by hand or with a spoon, not a blender.
Roll into meatballs, approx. ½ oz. or a little larger if desired. Place on baking sheet and bake in 400° oven 10 - 15 minutes or until done. Break one open to check, should be firm with no raw meat in the center. Drain off excess juices and save. Hold on side keeping warm.
Place pan juices in sauce pan with remaining cream, chocolate, and chipotle sauce. Reduce slightly (low flame, simmer don't boil). Adjust chipotle sauce for desired spice. Pour sauce over cooked meatballs and serve.
Chef Leonard's Note: Very good appetizer with tooth pick service. Also good with rice or pasta. Can be placed in soft french roll and served as a sandwich.
