Mini Beef Eaters: Serves 6 - 10

Ingredients:

2 lbs. thinly sliced roast beef
2 fresh crusty Baguettes (whole loafs)
2 cups beef broth or au jus
1/3 cup prepared horseradish (needs to be good quality and SPICY!!!)
½ cup sour cream
1/3 cup melted butter
2 TBS. Wildwood Blends All-Purpose Seasoning


Split Baguettes down the center leaving back connected to open as a hinge. Brush split loaves with melted butter and brown under broiler or on grill top. Hold on side. Heat beef broth or au jus in sauce pan, place sliced beef in broth to heat (do not boil as the beef is already cooked, just need to get it hot).

Mix sour cream, horseradish, and the Wildwood Blends All-Purpose Seasoning in bowl. Spread sour cream mixture over open faced baguettes on both sides. Place meat evenly between the loaves, fold over top secure with club sandwich tooth picks and cut into sections held together by tooth pick.

Pour beef broth or au jus in soup cup and serve hot for dipping.

Chef Leonard's Note: Add more excitement to this sandwich by placing finished sandwich open faced under broiler topped with thinly sliced Provolone or Swiss cheese, melt, close and serve.
